How much artwork bleed should I have in my artwork file?

To ensure that you do not have any white edges when printing/pressing you should always have 1/4 to 1/2 inch of bleed around the item. The larger the item the more bleed you will want to have as there could be slight size differences due to manufacturing limitations. If you have this bleed amount ( or more ) around your artwork there will a greatly reduced chance of having white edges when pressed.
